Maple Glazed Salmon

I've recently started using an awesome new website called EatThisMuch.com.  It's an amazing site that lets you input very specific data tailored to you or your family, including stats like daily calorie intake, your current weight, your weight goal, any specific diet plans, and even what kinds of food you hate (perfect for picky eaters and allergy sufferers!) and how "easy" your meals should be!  Then it'll generate one whole day's worth of food in the form of various recipes along with breaking down the number of calories, amount of fat, carbs, and protein, and even how much it all should cost in a day.  So handy!

It isn't a perfect website yet, but from what I've used so far, I'm seriously digging it.  (And no, by the way, I'm not being compensated for this post.  They don't know I exist!)  We've even gotten a new favorite recipe from the site, which I'm sharing with you guys today!  This recipe is also great because after I looked through my Recipes page here on the blog and realized I have basically no seafood recipes listed, it'll help me at least round out that lonely section!

I really, really love how simple and delicious this salmon turned out to be.  The glaze is whipped up in basically one minute, if that, and packs tons of flavor.  Instead of broiling it like in the original recipe, however, I like to bake mine, especially if I'm baking other things to serve along with it, like the Oven Roasted Broccoli shown in these pictures.  But this is seriously a new favorite of ours that has already firmly established itself in our weekly rotation.  You should give it a try ASAP!



Ingredients [2 servings]

  • 2 fillets raw pink salmon, fresh
  • 1 tbsp maple syrup
  • 1 tbsp hoisin sauce
  • 1 tsp dijon mustard
  • 1/4 tsp black pepper


Directions


Preheat your oven to 400 degrees.  Combine the first four ingredients into a bowl and whisk until fully incorporated.


Line a baking dish with aluminum foil (for easy cleanup!).  Coat with cooking spray and then lay the salmon fillets skin side down.


Brush both fillets with the maple syrup mixture thoroughly and then place in the oven.


Bake for about 15 minutes total or until the fish flakes easily with a fork.  Brush with the maple mixture two more times during baking, once at around 5 minutes and again at around 10 minutes.  Then serve with your choice of starch and veggies and enjoy!
