No Peek Beef Tips

Sometimes when you come across a recipe, you become eternally grateful to its author.  That's how I feel about this recipe for beef tips from Mommy's Kitchen -- holy yum!  Mr. L has always been a huge fan of beef tips, as have I.  I remember my mom normally cooking them in a crock pot growing up.  Although this recipe uses an oven, the concept is the same.  Cooking these tips low and slow for hours makes them incredibly tender and flavorful.  It's absolutely my preferred method for beef tips and Mr. L's too!

I'm actually a little surprised I haven't blogged about this recipe sooner.  I've made it SO many times now and it's always a huge hit, even with picky eaters, which is always a load off my mind!  I prefer serving these tips with some good, creamy mashed potatoes and Mr. L prefers them with white rice.  I always end up making both to make us both happy, haha.  But whatever you serve them with, give them a try!  You won't regret it!



Ingredients [6-8 servings]
  • 2 lbs beef tenderloin tips
  • 1 can cream of celery soup (Mr. L prefers celery over mushroom)
  • 1 packet brown gravy mix
  • 1 packet dry onion soup mix
  • 1 cup beef broth (or water)

Directions


Add the 2 lbs of beef tips to a 9x13 pan.  In a large bowl, mix together the soup, brown gravy mix, onion soup mix, and beef broth (or water).  Pour the mixture over the tips.


Cover with foil and bake at 300 degrees for three hours.  Don't remove the foil until the tips are done (hence the no peek part of the title)!


Serve over your preferred starch with a side of veggies and enjoy!
