Garlic and Parmesan Roasted Asparagus

I think I have officially jumped on the roasted vegetable bandwagon, which probably isn't a surprise to most of you considering my Oven Roasted Broccoli and Roasted Parmesan Zucchini recipes I've put up here on the blog recently.  There is just something special about roasting that really brings out a delightful crispiness as well as a burst of flavor to any vegetable out there.  Case in point: this recipe for roasted asparagus!

I was never a fan of asparagus growing up.  When Mr. L and I got married, I think this was one of the few vegetables I didn't like but he did.  Thankfully I caved and "re-tried" it as an adult and couldn't get enough!  Now roasted asparagus is a staple side dish at our dinner table.  Give this recipe a shot and it could be a staple at yours, too!



Ingredients [4 servings]
  • 1 bunch of asparagus with ends snapped off
  • 2 tbsp of olive oil
  • 2 tbsp of grated Parmesan cheese
  • 1 tbsp of garlic powder
  • Salt and pepper to taste
Directions

Preheat your oven to 350 degrees and cover a baking sheet with aluminum foil.


Drizzle the asparagus with the olive oil and add the Parmesan cheese, garlic powder, salt, and pepper.  Roll the stalks around the pan until they are evenly coated with the mixture.


Bake in your preheated oven for 15 minutes or until the asparagus turns bright green in color.


Serve with your favorite entree and enjoy!
