Tater Tot Casserole

Last night for dinner, I whipped up a super-fast and super easy version of Tater Tot Casserole.  The instructor who came to Pensacola to replace Mr. L after we move to Hawaii has been requesting it for quite some time, and I finally decided to oblige him!

This version calls for sloppy joe sauce rather than a "cream of" soup mixture.  I'd made this once before back in December, so I was able to make some proper adjustments this go around.

Tater Tot Casserole (originally adapted from an Allrecipes.com recipe I can't seem to find right now!)


Ingredients
  • 1 lb ground beef (or in my case, ground deer meat!)
  • 1/2 cup diced onions, if desired (not necessary if you use a sloppy joe mixture with lots of veggies!)
  • 1 jumbo can sloppy joe sauce (I used a 26 oz can because I definitely found one regular can to be not enough sauce)
  • 1 bag frozen tater tots
  • 1/4 tsp garlic powder
  • 2 cups shredded cheddar cheese
Directions

Brown ground beef and onions in skillet (or add the onions later if you're like me and forgot...).


After fully cooked through, add can of sloppy joe sauce and the garlic powder.


Heat through for 5-10 mins and then add to oven-safe dish.


Sprinkle half the cheese over the sloppy joe mixture and add all of the tater tots.


Heat oven to 375 degrees and cook mixture for 35 mins.  Add rest of the cheese on top of the tater tot layer; cook for another 10 minutes or until cheese is completely melted.  Serve and enjoy!

Like I said, it was incredibly easy, and pretty yummy too.  I'll probably try it again soon since I'm attempting to use up all of our frozen deer meat before heading to Hawaii!  :)
